The Sorachi Ace variety
Originally produced by the Sapporo Brewery in Hokkaido, Japan, in the mid-1980s, it was resurrected in the US in 2006. Sorachi Ace is a UFO in the world of hops, and its genetics are certainly a factor! It is a cross between Saaz, Brewer’s Gold and BeiKei No. 2. Sorachi Ace is considered excellent in many styles of beer, especially those who desire a coconut, lemon flavour. Some brewers have found flavours of orange, coriander, dill and oak.
